Kernels of a peanut contain up to 53% of fat oil which part glycerides of arakhinovy, lignotserinovy, stearin, palmitic, gipogeevy, olein, linoleic, laurinovy, miristinovy, begenovy, eykazenovy and tseritinovy acids are. Except oil, in seeds there are proteins (to 37%), globulins (to 17%), "arakhin" konarakhin, glyuteinina (about 17%), and also vitamins B, (especially in a peel of seeds), E, pantothenic acid, biotin, etc. From cake of seeds emit liquid alkaloid arakhin, the betaine also is well-cared.
The peanut not only is tasty, but also is useful: it contains unique amino acids, A, D, E, V1, V2, RR, E vitamins, biotin. Proteins of a peanut are characterized by an optimum ratio of amino acids and therefore they are well acquired by a human body.
